Instead of signing with the Colorado Rockies, he chose to play college baseball at the University of Minnesota. As a member of the Hyannis Harbor Hawks of the Cape Cod Baseball League in 2016, he participated in the Cape Cod Summer Baseball League.
The Colorado Rockies selected him again in the seventh round of the 2017 MLB draft and later signed him to a contract.

The Rockies will have him on their 40-man roster after the 2020 season. On April 17, 2021, Gilbreath made his debut in the major leagues without ever having played a game.
As of May 1st, he was reinstated to the active roster of the team. In his first MLB appearance as a reliever, Josh Rojas hit a solo shot.
