From 2013 to 2017, he was a member of the University of Texas at El Paso (UTEP) Miners football team. From 2014 to 2017, he started all 49 games after redshirting his rookie season.
He made the second team of All-Americans following the 2016 campaign. He was selected to the 2017 C-USA first team following the campaign. The College Football All-Star Challenge also extended an invitation to him. Hernandez was chosen by the New York Giants in the second round of the 2018 NFL Draft.
He was given a four-year, $7.45 million contract by the New York Giants on May 12, 2018, with a $3.49 million signing bonus and a $5.08 million guarantee. He was selected to the PFWA All-Rookie Team and began the year as the Giants’ starting left guard, starting all 16 games. He tested positive for COVID-19 in October 2020, and the Giants then put him on the reserve/COVID-19 list.
He was added back to the roster in November 2020. He did not start at left guard for the balance of the season, though, falling to rookie Shane Lemieux. He signed a one-year contract with the Arizona Cardinals on March 28, 2022.
