Gifford went to Lincoln Southeast High School for his high school education. There, he played football as both a tight end and a safety.
He was an important part of the squad that won the state championship in 2011 when he was just a sophomore. During his junior year, he was named to the All-Nebraska second team. When he was a senior, he was selected as the team’s starting quarterback.

Luke Gifford attended the University of Nebraska–Lincoln after high school and played for the Nebraska Cornhuskers.
He had every intention of playing safety for the University of Nebraska Cornhuskers after accepting a football scholarship there, but his position was switched to linebacker.
As a redshirt freshman, he played in six games before he hurt his hip and had to miss the rest of the season. He had seven tackles, including one for a loss. As a sophomore, he was used as a backup in four games, but he was only credited with one assisted tackle.
He started seven games as a junior outside linebacker before a hip injury ended his season. He recorded 39 tackles, including five for losses, and 1.5 sacks before sustaining a hip injury that ended his season. In total, he played in a total of eight games.
