He played football while he was a student at Hoffman Estates High School. After graduating from high school, he enrolled at Drake University where he played collegiate football for the Drake Bulldogs.

He accepted a request to participate in the 2017 East-West Shrine Game, it was revealed in December 2016. With the 174th overall pick in the 2017 NFL Draft, the Atlanta Falcons selected Saubert in the fifth round. He was acquired by the New England Patriots in a trade in August 2019. On August 31, 2019, the Patriots cut him loose at the final roster trimming.

Saubert and the Denver Broncos agreed to a deal in May 2021.
