Guillorme was drafted in the tenth round of the 2013 MLB draft by the New York Mets. He hit .258/.337/.283 with 11 RBIs in 41 games for the Gulf Coast Mets in his first professional season.
He hit .283 with 17 RBIs in sixty games with the Kingsport Mets and Savannah Sand Gnats in 2014. In 122 games, he hit .381 with 55 RBIs, 18 stolen bases, and a .746 OPS, earning him the South Atlantic League MVP award.
In qualifying for the 2017 World Baseball Classic, Guillorme started at shortstop for the Spanish national team.
In 2016, he hit .263 with one home run and 46 RBIs for the St. Lucie Mets, and in 2017, he hit .283 with one home run, 43 RBIs, and a.706 OPS for the Binghamton Rumble Ponies.
