He pitched for the baseball team at his high school. He was selected the Orange County Register Pitcher of the Year after posting an 11–3 record with a 1.51 earned run average (ERA) and 123 strikeouts as a senior.
He pitched 11 strikeouts and allowed only two hits in his final game, leading Santa Margarita to victory in the 2014 California Interscholastic Federation SS Division I Championship.
Canning was picked in the 38th round of the 2015 Major League Baseball Draft by the Colorado Rockies, but he declined to sign and instead played collegiate baseball for the UCLA Bruins.
Canning started 11 of his 15 games as a freshman at UCLA in 2015. He went 7–1 with a 2.97 ERA and 66 strikeouts in 66 innings pitched.
As a sophomore, he was named UCLA’s starting quarterback. He was 5–8 with a 3.70 ERA and 95 strikeouts in 15 starts.
In 2017, Canning was re-instated as UCLA’s ace pitcher. He finished 7–4 with a 2.34 ERA and 140 strikeouts in 17 starts.
