Jones played college baseball at the College of Southern Idaho and Washington State University after graduating from Twin Falls High School in Idaho.
The Philadelphia Phillies selected him in the 18th round of the 2017 Major League Baseball draft.
Jones made his professional debut with the Williamsport Crosscutters, going 2–3 in 26 bullpen innings with a 4.85 earned run average (ERA).
In 23 games with the Lakewood BlueClaws in 2018, he pitched to a 10–7 record and 3.41 ERA (22 starts).
Jones began the 2019 season with the Clearwater Threshers, for whom he was named a Florida State League All-Star, before being promoted to the Reading Fighting Phils in June and then to the Lehigh Valley IronPigs in July.
Jones finished 5-4 with a 2.91 ERA in 23 starts for the three teams, striking out 152 batters in 114+13 innings.
Jones was added to the Phillies’ 40-man roster after the 2020 season.
He did not play in a minor league game in 2020 since the minor league season was canceled due to the COVID-19 epidemic.
Jones was promoted to the major leagues for the first time on April 19, 2021. The next day, he was optioned down without making an appearance.
After Alec Bohm, Connor Brogdon, Aaron Nola, and Bailey Falter were placed on the COVID-19 disabled list on July 11, Jones was recalled to the majors once more.
Jones was optioned down to Lehigh Valley again on July 16, but he did not play. On August 10, he made his Major League Baseball debut, pitching the 13th inning against the Dodgers.
