He played football while a student at Saint Ignatius High School, earning first-team Division-I All-Ohio and U.S. Army All-American honors as a senior. He chose Ohio State University to continue his football career despite being a four-star prospect right out of high school.

He participated in football for the Ohio State Buckeyes squad while he was a student there. He redshirted in his first season of eligibility in 2015 as a true freshman and finished the 2016 season with 52 total tackles, including 4 tackles for loss.

During his second season in 2017, Jones showed some regress, although he still finished the year with 20 total tackles, 5 of which were for a loss and 1 of which was a sack. In the third round of the 2019 NFL Draft, the Denver Broncos picked Jones with the 71st overall choice. In September 2020, he suffered a knee injury.

He was placed on injured reserve and activated in October. In Week 7 against the Kansas City Chiefs, he recorded his first season-high sack. With seven tackles, three for a loss, and a sack in Week 8 of the 2022 season against the Jacksonville Jaguars, he defeated them 21-17 and was named AFC Defensive Player of the Week.
