Plesac started his professional career with the Class A Short Season Mahoning Valley Scrappers in 2017, and after compiling a 1.38 ERA in eight games (seven starts), he was promoted to the Class A Lake County Captains, where he concluded the season with a 1-1 record and a 3.60 ERA in six appearances.
Plesac pitched for both the Class A-Advanced Lynchburg Hillcats and the Double-A Akron RubberDucks in 2018, compiling an 11-6 record with a 3.79 ERA in 26 total starts. In 2019, he returned to Akron and was promoted to the Triple-A Columbus Clippers in early May.
On May 28, 2019, the Indians selected Plesac’s contract from the Clippers.
Upon his contract selection, he made his MLB debut against the Boston Red Sox at Fenway Park, surrendering one run on four hits in 5+13 innings and collecting a no-decision.

Plesac was sent home by car service by the Indians on August 9 after breaching team and Major League Baseball COVID-19 protocols while out with friends in Chicago following a game against the White Sox.
