Jack Mayfield was raised in the Texas border city of Del Rio, where he currently resides and attended Del Rio High School. Due to his Hispanic mother Maria, who lived only four miles from the Mexican border, he also grew up in a multilingual household.
He attended the University of Oklahoma from 2010 to 2013, during which time he played college baseball for the Oklahoma Sooners.
The Houston Astros drafted Mayfield as an undrafted free agent in 2013. For Houston in 2019, he made his major league debut. He has taken part in MLB games with the Houston Astros, Los Angeles Angels, and Seattle Mariners.

On February 25, 2021, the Los Angeles Angels of Anaheim claimed Mayfield off waivers.
The Seattle Mariners claimed Mayfield off waivers on April 27, 2021. Seattle designated Mayfield for assignment after he went 6-for-34 in his 11 games with the team.
On June 13, 2021, the Los Angeles Angels, who had previously claimed Mayfield off waivers, optioned him to the Triple-A Salt Lake Bees and he was promoted to the Angels on July 6, 2021, and is still with the team to date.
