Jhonathan Diaz made his major league debut at the end of the 2021 season after pitching for the Venezuelan national team.

In July 2013, Diaz was signed by Boston Red Sox scouts Eddie Romero and Angel Escobar. Diaz had a good professional start with the 2014 DSL Red Sox, going 6-2 with a 1.63 ERA and a 0.94 WHIP.

In the Dominican Summer League, he was ninth in ERA, behind Miguel Bautista and Samuel Zazueta. He did, however, miss the next year due to knee surgery.

In 2016, he pitched for the GCL Red Sox and went 4-4 with a 2.85 ERA. In the Gulf Coast League, he was second in Ks (57, 8 behind Nick Fanti), second in IP (60, five behind Hildemaro Requena), and third in K/9 IP.

In his full-season debut for the Greenville Drive in 2017, he slumped to 6-6, 4.57. In 2018, he spent time between the Salem Red Sox (0-1, 3 R in 4 1/3 IP) and the Greenville Drive (11-8, 3.00).

He was tied for the South Atlantic League lead in wins with Tyler Phillips, tied for the league lead in strikeouts with Spencer Howard and Tony Dibrell, tied for fifth in WHIP (1.06), and eighth in ERA (tied with Domingo Robles and Reid Anderson).

Diaz is tied for second place among Red Sox farmhands in victories (one behind Denyi Reyes), ERA (one behind Reyes), and strikeouts (151, six behind Kutter Crawford).
