He played football while he was a student at Hoffman Estates High School. After graduating from high school, he enrolled at Drake University where he played collegiate football for the Drake Bulldogs.
He accepted a request to participate in the 2017 East-West Shrine Game, it was revealed in December 2016. With the 174th overall pick in the 2017 NFL Draft, the Atlanta Falcons selected Saubert in the fifth round. He was acquired by the New England Patriots in a trade in August 2019. He hauled in two receptions for a total of 21 yards in the 2019 campaign. He joined the Jacksonville Jaguars’ practice squad in September 2020. Saubert and the Denver Broncos agreed to a deal in May 2021.
He has one reception for seven yards as the third tight end on the active roster in Week 1’s game against the New York Giants. He snagged his first-ever touchdown pass in the win over the Chargers in week 12 of the season. In May 2022, the Broncos offered him a new deal.
