Berryhill High School, in Tulsa, Oklahoma, was where Jackson went to high school. That year was his final high school season, and Baseball America selected him as a second team All-American because of his 13–1 win-loss record and 0.38 earned run average (ERA).
He had 147 strikeouts over 7223 innings of work. After graduating from high school with a 4.0-grade point average, Jackson was named the valedictorian of his class.
His next stop was the University of Arkansas, where he played for the Arkansas Razorbacks for three seasons. Jackson had a 2.53 earned run average in 4223 innings pitched as a rookie, while also striking out 42 batters.
As a sophomore in 2015, Jackson had 27 bullpen appearances, going 5-1 with a 2.10 ERA, 89 strikeouts, and 9 saves in 60 innings thrown.
As a result, he was selected to the All-SEC First Team and the Collegiate National Team. The Razorbacks used Jackson as both a starter and a reliever in his last season, and he finished with a 3–4 record and a 5.09 ERA, as well as 66 strikeouts and 4 saves.
This year, the Toronto Blue Jays drafted Jackson with their third-round selection in the Major League Baseball draft.
He received a $275,000 bonus and was assigned to the Gulf Coast League Blue Jays. After a single appearance in the GCL, Jackson was promoted to the Short Season-A Vancouver Canadians of the Northwest League, where he finished the season.
Jackson had 14 appearances as a reliever in 2016, going 1-1 with a 3.38 ERA and 23 strikeouts in 1823 innings. He began the 2017 season with the Class-A Lansing Lugnuts before being promoted to the Advanced-A Dunedin Blue Jays in June.
Jackson finished the season with a 2–2 record, a 2.47 ERA, and 68 strikeouts in 51 innings.
Jackson was selected by the Oakland Athletics in the Rule 5 Draft on December 10, 2020. He did not appear in a minor league game in 2020 since the minor league season was canceled due to the COVID-19 epidemic.
The Athletics picked Jackson’s contract on April 7, 2022, and he will be on their opening day roster that season.
