Before moving to Valdosta State, Jody Fortson played his first season of collegiate football at Erie Community College. In 19 games with the Valdosta State Blazers, wide receiver Fortson recorded 37 receptions for 477 yards and 7 touchdowns.

Fortson was selected to participate in both the College Gridiron Showcase and the Tropical Bowl all-star games despite having an injury-shortened senior season during which the Blazers won the Division II National Championship.

On May 13, 2019, Fortson signed as an undrafted free agent with the Kansas City Chiefs after switching to tight end in the NFL. On August 31, 2019, he was released, and the following day, he was added to the practice squad.

Fortson spent the remainder of the regular season on the practice squad, and the Chiefs defeated the San Francisco 49ers in Super Bowl LIV. On February 5, 2020, the Chiefs re-signed him. In 2020, on September 5, he was released. The following day, he joined the practice squad.
