Eric Saubert is a tight end with the National Football League’s Denver Broncos. He stands 1.96 m tall and weighs 115 kg. He played football when a student at Hoffman Estates High School. He attended Drake University after high school and played collegiate football for the Drake Bulldogs.

He accepted a request to take part in the 2017 East-West Shrine Game, it was revealed in December 2016. With the 174th overall choice in the 2017 NFL Draft, the Atlanta Falcons chose Saubert in the fifth round. He was sent to the New England Patriots in August 2019. On August 31, 2019, the Patriots cut him loose after the final roster cut.

Saubert joined the practice squad of the Oakland Raiders on September 1 of 2019. From the Raiders’ practice squad, the Chicago Bears acquired him in November 2019. He had two receptions for a combined 21 yards during the 2019 season. As of September 2020, he was a member of the Jacksonville Jaguars practice squad. Saubert gave his Denver Broncos commitment in May 2021.

He caught his first touchdown pass of his career during the win over the Chargers in week 12. In May 2022, he re-agreed to play for the Broncos.
