Edwin was born on April 21, 1994, in Caguas in Puerto Rico. His parents are Heyda Rosario and Edwin Rios. They are both from Puerto Rico. His family moved from Puerto Rico to Kissimmee, Florida in the United States when he was very young.

In 2013 and 2014, Edwin played for the Cotuit Kettleers of the Cape Cod Baseball League and the Orleans Firebirds. He was drafted by the Los Angeles Dodgers in the 6th round of the 2015 MLB draft.

After he was drafted, he signed with the Dodgers and began his professional career playing for the Arizona League Dodgers which is an affiliate of the Los Angeles Dodgers.

He was added to the Dodger’s 40-man roster at the end of the 2018 baseball season. He was promoted to the majors in June 2019. He also made his MLB debut that same day when the Dodgers played against the Colorado Rockies.
