In the 2010 MLB draft, the Pirates selected Taillon as the second overall choice. In 2016, he made his Major League Baseball debut. Taillon was sent to the Yankees by the Pirates before the 2021 season.

The Pirates sold Taillon to the New York Yankees on January 24, 2021, in exchange for prospects Miguel Yajure, Roansy Contreras, Maikol Escotto, and Canaan Smith. With a 1.16 ERA, he was awarded the American League Pitcher of the Month in July.

He was 8–6 in 29 starts in 2021, with a 4.30 ERA and 140 strikeouts in 144+13 innings.

Taillon threw 7 flawless innings in game 2 of a doubleheader against the Los Angeles Angels on June 2, 2022. A Jared Walsh doubles in the eighth inning would put an end to the bid.

On May 8, 2017, Taillon underwent testicular cancer surgery. One of his testicles had to be removed. He had been cancer-free since 2019.

Taillon was born in the United States, but his parents are Canadians, and he is a dual citizen of the two nations.
