Greg grew up in Metairie, Louisiana in the United States of America. He played high school baseball at Brother Martin High School in New Orleans, Louisiana. No baseball team drafted him after high school so he enrolled at the Louisiana State University (LSU), where he played college baseball for the Tigers.
In 2016, whiles still at the University, the Minnesota Twins drafted him in the 26th round of the 2016 MLB draft, but he did not sign with them and rather chose to play collegiate summer baseball with the Bourne Braves of the Cape Cod Baseball League.
During the 2017 MLB draft, the Oakland Athletics selected Greg in the second round of the 43rd overall pick of the draft. He signed with Oakland this time and was assigned to play with the Low-A Vermont Lake Monsters.
Greg played with the Midland RockHounds of the Double-A Texas League during the 2019 minor league season. He was also selected to play in the Arizona Fall League for the Mesa Solar Sox in 2020.
