He was not selected out of college and spent 2017 playing in the Pecos League, American Association of Professional Baseball, and Pacific Association before signing with the Milwaukee Brewers for the 2018 season.

He pitched for the Rookie-level Arizona League Brewers and the Pioneer League’s Rookie-level Helena Brewers, posting a 3.26 ERA in 19+13 innings.



He pitched for the Class A Midwest League’s Wisconsin Timber Rattlers in 2019, going 3-7 with a 3.96 ERA in 31 games (16 starts), striking out 92 batters in 109 innings.

He was released by the Brewers following the completion of the season and did not play a game in 2020 due to the cancellation of the season due to the COVID-19 pandemic.

Gillaspie was signed by the Baltimore Orioles for the 2021 season, splitting the season between the Aberdeen IronBirds of the High-A East and the Bowie Baysox of the Double-A Northeast, going 1-3 with a 4.97 ERA in 26 bullpen appearances, striking out 52 hitters in 41+23 innings.

After the season, he was selected to play for the Mesa Solar Sox in the Arizona Fall League. The Orioles picked Gillaspie’s contract and added him to their 40-man roster on November 19, 2021.
