During the 2017 Major League Baseball draft, he was selected by the Houston Astros in the second round. He agreed to the deal, reneging on his promise to play college baseball at Miami.

With the Gulf Coast Astros of 2018, Perez hit.364 in 11 at-bats, and with the Tri-City ValleyCats of 2019, he slugged.188 with seven home runs and 27 RBIs in a total of 57 games.

No team signed him since the 2020 Minor League Baseball season was postponed due to the COVID-19 outbreak. Asheville Tourists and Corpus Christi Hooks promoted Perez from Fayetteville Woodpeckers in 2021.

The Astros selected Florida prep Joe Perez in the second round of the 2017 draft, a promising two-way player with an uncertain future. It was clear that Perez required Tommy John surgery on draft night. The next day, he received it.

Later, in 2018, Perez had shoulder surgery, which limited him to just 50 games in 2019. Perez was unable to play baseball in 2020 since the Astros did not invite him to their other training facility.

An unforgettable year in 2021 paved the way for Perez to become a promising element of Houston’s future. The 22-year-old third baseman progressed from Low-A Fayetteville to High-A Asheville and then to Double-A Corpus Christi.
