Mitchell grew up in Erath, Louisiana, and attended Erath High School, where he was a member of the football team his senior year. Because of an injury during his senior season, he only played in eight games, but he still carried for 1,903 yards and 28 touchdowns.

Mitchell attended the University of Louisiana at Lafayette, where he competed in collegiate football. Mitchell gained 257 yards and four touchdowns on 42 attempts as a freshman before breaking a bone in his foot and being sidelined for the remainder of the year.
A sophomore, he ran for 977 yards and 13 touchdowns and caught 20 receptions for 349 yards and three touchdowns, earning him a spot on the Second Team All-Sun Belt Conference
